Anti-Oxidant (INS 301) Description Anti-Oxidant (INS 301) is a highly reactive sodium salt of ascorbic acid. It occurs naturally in most fruits and vegetables. It can be produced by bacterial fermentation of glucose, followed by chemical oxidation. It is in the form of white, odourless crystalline powder which darkens on exposure to light. It is considered a food additive, used as a natural antioxidant in food and beverages.
